GARLIC [ALLIUM SATIVUM ]
Among the varied
culinary items Garlic stands apart in that, it has a pan-India appeal as a
regular component in a variety of dishes; besides it is a medicine too to help
humans of every stage –be it infant, child, youth or old. A section of the
people is readily disturbed at the very name ‘Garlic’. So to say, it is both a
delight [to some] and a dreaded one [to some].
Botanically Garlic shares kinship with Onion in that
both share generic value as ‘Allium’ though differing in species . Both are
cultivated for their bulbs and are known world over.
Garlic is a global vegetable
crop ; but is more venerated for its potential as a medicine capable of serving
varied situations including respiratory, digestive, helminth-induced problems
and several cardio-vascular ailments. Garlic is among the most popular stuff to
tackle cholesterol
The plant is a small
herb growing to about three feet or so and strongly resembles onion.
However Garlic can
unleash a hot pungent sulphurous vapour
whenever the cells are damaged by abrasion or cut. In addition , injury helps
certain compounds to interact with air and partake in reactions producing
Allicin and Ajpine
diallylpolysulphides S alicysteine are some products derived from aerial
oxidation upon injury to the garlic tissue.
The oxidized products
and their strong pungent smell help to repel insects and pests. The chemistry
of garlic helps to fight gut disorders and is said to possess vermicidal
property. Quite an interesting item is garlic, by its sheer presence and popularity across
the globe .
